Creamy Corn Soup

Learn how to make a creamy, homemade corn soup, perfect for cold days or light meals. A simple, healthy recipe that's full of flavor!


Ingredients:

4 ears of corn or 2 cups of frozen green corn

1 medium onion, chopped

2 cloves of garlic, crushed

2 tablespoons of olive oil

500 ml of vegetable broth

Salt and pepper to taste

100 ml of vegetable cream or coconut milk (optional, for extra creaminess)

Parsley or chives for garnish


Preparation:

Remove the corn from the cobs (if using fresh) or use frozen corn.

Heat the olive oil in a pan and sauté the onion and garlic until golden brown.

Add the corn and sauté for 5 minutes.

Add the vegetable broth, season with salt and pepper, and cook for 10-15 minutes.

Blend the soup in a blender until creamy. If desired, return to the pan and add the vegetable cream or coconut milk, heating for another 2 minutes.

Serve hot, garnished with parsley or chives.
