Ingredients:
Dough:
2 cups of wheat flour (or 1 cup of wheat flour + 1 cup of whole wheat flour)
1 tablespoon dry yeast
1 teaspoon sugar
1 teaspoon salt
2 tablespoons olive oil
3/4 cup warm water
Sauce:
3 ripe tomatoes, chopped
1 clove garlic, crushed
1 tablespoon olive oil
Salt, pepper, and oregano to taste
Filling:
1/2 cup grated vegan cheese or lactose-free mozzarella
1/2 sliced onion
1/2 sliced bell pepper
Olives, sun-dried tomatoes, or mushrooms to taste
Basil leaves for garnish
Preparation:
Dough: Mix the yeast, sugar, and warm water, and let it activate for 5 minutes. Then add the flour, salt, and olive oil. Mix until a smooth dough forms. Knead for 5-7 minutes. Let it rest, covered, for 30 minutes.
Sauce: Sauté the garlic in olive oil, add the chopped tomatoes, cook for 10 minutes and season with salt, pepper and oregano. Blend in a blender if you want a smooth sauce.
Assembly: Roll out the dough in a greased pan, spread the sauce, add the lactose-free cheese and vegetables.
Oven: Bake in a preheated oven at 200°C for 20-25 minutes or until the dough is golden brown.
Finishing: Garnish with fresh basil leaves and serve hot.
